i have installed laminate flooring like this at my dad's place. it took us most of the afternoon to do one room about the size of your office at your current apartment. you'll need a sawhorse and a circular saw to cut the pieces, and honestly that took the most time: planning, measuring and cutting. laying them down is actually pretty easy. you'll then have to do a baseboard around the room(s).
are you doing them parallel to the wall, or at a 45 degree angle? the latter would obviously be considerably more difficult as far as cutting and measuring goes, but the laying down would probably be just as easy.
i would plan on a little more than an afternoon, especially since you have to consider moving furntiture in/out for the project. but overall it's definately easy enough to do yourself.

However, my bank looked at my recent credit report to find the amount paid off, and AMEX might have faxed them the necessary paperwork. Regardless, we're looking to close escrow today or tomorrow.
